"chocolate" sandwiches and a better forecast!

You know me, I am always trying to come up with healthy, kid-friendly snacks that impress my boys! Yesterday I made what they called, "chocolate sandwiches" and they both gave it TWO, THUMBS UP!
Honey Graham Crackers, Nutella, and a freezer is all that you need for this one!

Split the cracker at the seam, so you'll have smaller, rectangle pieces for those small hands! Place small amount Nutella or any other nut spread(peanut butter would be yummy too!) and top with other cracker! Put in the freezer for about 20 minutes to set and ENJOY!!! I admit I did not try this one, but my oldest son told me it was the best thing he'd ever eaten! Guess that means it was GOOD!

Now that my oldest is in preschool three days a week, I'm having to try and create new things for his lunches and snacks to keep things interesting! Although he has a really cool Batman lunch kit, he still needs some cool snacks too! So this means I'll be sharing a lot of fun and healthy recipes this school year...so get ready!!

Today's Workout: Well today it didn't happen for me, but tomorrow WILL be a nice morning run! Our Texas forecast just claimed that we are finally out of the 100+ temps for a few days, so I'm taking advantage of it! With a projected high of 88, I'm all about a great run! Wish me luck and let's hope their forecast is right :)

on a trampoline?

I love to stress to people looking to lose weight and change their lives, that they MUST find an exercise that they ENJOY. They will not commit or make a healthy lifestyle change if it is something they do NOT enjoy...right? Why would someone want to commit to a new way of life, change their eating habits and dedicate time away from their family with some form of exercise that they HATE? This is why I am fascinated by new and revolutionary exercises that burn calories while allowing participants to HAVE FUN!!!

I'm boring. I like the outdoors and a good, running trail is all that I need! Or a bike ride, spin class, a great group fitness class such as kickboxing or boot camp!

cholesterol lowering tips and my workouts

September kicks off National Cholesterol Education Month, so these cholesterol lowering recipes and tips from MerckDiabetes might be helpful to you and your family. You have probably seen products in the grocery store that claim to "lower cholesterol" and that might be true but foods like nuts, soy, plant oils (found in foods like margarine), barley and oats have been found to reduce cholesterol levels.

Cholesterol, a fat-like substance that’s made by your body or comes from your diet, can significantly contribute to heart disease in people with type 2 diabetes.
· Low-density lipoprotein participles, or LDL, carry most of the cholesterol in the blood. Over time, unhealthy levels of LDL can cause cholesterol build up in the arties forming plaque, which can reduce blood flow. This can lead to a heart attack or stroke.


Here are a few recipes that you might want to try. Both would be a great treat for your family and they wouldn't even have to know they were packed with cholesterol lowering ingredients! I'm SO sneaky...ha!

Maple Pecan Scones (from MerckDiabetes.com)
Serves: 24

Ingredients
3 cups all-purpose flour
1 cups pecans, chopped
1 1/4 tablespoons baking powder
3/4 cups trans fat-free margarine
1/2 cups maple syrup
1/3 cups skim milk

Preparation
Preheat oven to 375 degrees F.

Combine flour, nuts, baking powder and margarine in a medium-sized mixing bowl. Mix by hand until margarine is in pea-sized pieces, then add maple syrup and milk. Mix well.

Turn scone dough onto floured board. Roll to one-inch thickness and cut in small rectangular pieces, making 2 dozen scones.

Place scones spread apart on a non-stick tray. Bake until firm in center and golden on edges and bottom, about 20 minutes. Cool and serve warm.

Flax Chocolate Chip Cookies (from MerckDiabetes.com)
· Serves: 18

Ingredients

· 1 stick trans-free margarine
· 1/3 cups brown sugar
· 1/3 cups granulated sugar
· 1 egg white
· 1 teaspoons vanilla extract
· 1 cups all-purpose flour
· 1/2 cups rolled oats
· 1/2 cups ground flaxseeds
· 1 teaspoons apple pie spice
· 1 cups miniature chocolate chips

Preparation
Cream margarine and sugars together in a large mixing bowl with hand beaters. Add egg white; mix smooth.

Add the rest of the ingredients. Scrape the bowl and mix until the cookie dough forms a ball.

Preheat oven to 350 degrees F. Scoop cookies using small scoop or tablespoon onto nonstick cookie tray.

Bake in the oven until done, around 10 minutes. Remove from pan and allow to cool at room temperature. Store in bags or sealed container.

Today's Workout: Yesterday I tried the new CoreConcepts Coredio and Core-Tempo and WOW...all I can say is wow! My ONLY complaint is that there were no words to the really great music playing throughout the workouts(I love to sing along with I'm working out, but that might just be ME??!) Today I will try the TransCOREmation 360 series DVD if my abs will allow it!
I haven't run in over a week...I think I've taken a hiatus for another week until my 6am runs can involve a LITTLE less heat! I know I should probably push through, but for now I will try out all of these new DVD's I have received and get my thoughts and experiences about each, straight to you! That's a pretty good idea, right? I just hope I am ready for the half marathon, JANUARY 15, 2012!!! Yikes, writing it out...it's freaking me out a bit!!! Ha!

Bananalicious OATMEAL!

We all know I love oatmeal! Doesn't matter if it's plain, topped with fruit, PB, pumpkin...whatever! I LOVE IT! This morning I decided I wanted to jazz my oatmeal up a little differently, so I grabbed the Nutella and a banana! I sliced 1/2 banana and added to my cooked steel cut oats, 1 tbs Nutella and gave it a stir! WOOHOO!

The outcome: PURE DELICIOUSNESS!!!

It was like having dessert for breakfast! Ha!


My weekend was FABULOUS visiting and laughing with friends, but sadly it meant NO WORKOUTS! I am a little sad because the beach house had a great trail that ran along the water, but I TOTALLY forgot to pack a pair of tennis shoes...how could I forget those?!


*So today I'm back on track testing out a new workout DVD series called, Core Concepts transCOREmation! I'll let you know how it goes but it claims," to target every core muscle with a variety of holds and transitions. You will love the burn and sweat yourself into the best shape of your life! "

a few more days...and my weekend!

What kiddo wouldn't love one of these??! That cup of water is just TOO stinkin' cute!! So WHY HAVEN'T YOU ENTERED YET??!!!

Today's Workout: A nice, 3 miler before getting dressed for Meet the Teacher! My son has one more year of preschool-he will be attending 3 days this year! He is excited to see all of his friends! Not sure how many workouts I'll get in over the weekend...its my friends bachelorette party weekend in Galveston and all 17 of us girls are looking forward to a nice, relaxing weekend on the beach :)

Back to School Nutrition!

I received this article and found the information to be very helpful when it comes to children and heading back to school! As I'd tour the lunch room and visit my students, I'd too often find some not-so-healthy options on the table. If we pack smart and allow our children to assist in the lunch-making process, I think we'd all find some positive changes going on in the lunch room! Enjoy!!!

Foods to avoid
Think twice about giving your children foods with labels listing food additives, colors, preservatives, or chemical names you can’t pronounce. Also to be excluded:
MSG
Artificial sweeteners and high fructose corn syrup
Genetically modified foods
Trans fat and hydrogenated fat
Fruit juice from concentrate
White and/or bleached flour products.
Roasted or sugar coated nuts
Healthier options – getting back to basics
Think real food! Start offering your kids whole fresh or frozen fruits and vegetables, grains and unprocessed meats. Choose foods that have not been altered from their natural state. Whether your child is 2, 12, or 22 it is never too late to change the way you think about food. Here are some healthy lunch and after-school snack choices for your family that offer flavor and variety along with nutritional benefits.
Lunches:
Turkey roll up: A whole grain, rice, or corn pita, no nitrate lunch meat, lettuce or other leafy green, sliced tomato and hummus or whipped avocado as a pita dressing.
Almond butter sandwich:
2 pieces of whole grain, sprouted grain, or gluten free bread
1-2 Tablespoons of raw almond butter
½ cup of mashed fresh berries or an all natural/low sugar fruit preserve
Snacks:
A piece of fruit or vegetable slices with raw or natural nut butter
Trail mix: mixture of raw nuts and dried raisins, cranberries and pineapple
Mixed berries
Rice crackers and all-natural nut butter
Veggie bag: snow peas, green beans, carrots
Fruit leather, dried fruit slices, or fresh fruit
Greek yogurt and dehydrated veggie chips

a Fall garden? and other randomness!!!

Since our spring/summer garden went so well and our boys LOVED helping take care of it, we've decided a fall garden is definitely in the works! We know we want lettuce, broccoli, zucchini and squash...but what else?? Suggestions are greatly appreciated, especially if there's a certain fruit/veggie you've had success growing too :-)

My son's preschool will be having "Letter of the Week" and they must bring a show and tell item once a week, starting with that letter. I am planning on using some of these letters as health lessons as well. I'll let him choose any item, but I'll choose a health-related item with that letter as well! This way, I'm teaching a little of my MOST favorite subject as he moves along with the lesson plans at school! You know I gotta sneak health in there somewhere!! I am planning on using this last year of preschool, to help create some super healthy AND fun lunches for my boys! I want them to enjoy bringing their lunch to school...so I'll share some creative ideas I come up with along the way!

Today's Workout: 2 mile walk( yes WALK, it was too hot at 11am to get at a jogging pace) and a 30 minute yoga workout on Exercise TV. Can we say, BRING ON THE FALL WEATHER!!!

A Healthy Plate REVIEW AND GIVEAWAY!!!

I have been a loyal reader and follower of Amy @ Super Healthy Kids for a while now. Her and I have the same degree in Health Education and share a passion for teaching children and their families about good nutrition. This truly is genius! My kids thought the graphics were SO COOL and loved the "strawberry man"! Ha! My son and I play a game when I'm filling his plate. He'll tell me where each item belongs and goes straight for the veggie section of his plate, FIRST! Woohoo! Thank you, Amy! Using this plate helps me as a parent, create healthier meals with more veggies and fruit! Those graphics are a reminder to me as I'm preparing dinner...Momma, you better add more veggies to this meal or Uh No, this one needs more protein! She's made healthy eating simple and easy and I love this plate! If I was still teaching elementary kids, I'd buy enough for all of my students and this would be used as a learning tool for my classroom! These plates are a great deal at only $5.99. When I taught health and P.E., I remember getting the best feedback from children when we'd create a healthy plate! I'd have them take a plate, use magazine pictures to cut out what a nutritious plate should look like. They'd either create the perfect plate or they'd miss it all together. This would help me see where we were as a class and what our focus needed to be. By the end of our semester, the kids TOTALLY made the perfect plate just by looking and pointing! By seeing what was healthy and not, they could choose it by just looking and that was my goal! I wanted kids to make better choices when their health teacher WASN'T there!

just add BROCCOLI!

I have found that I am truly addicted to carbs! Ha Ha, as funny as it sounds...I totally crave all things carb! Not so much sugar, because I've never been a huge sweets person. But when it comes to pretzels and bread...I'm ALL over it if it's there! I try not to cook things like lasagna but if I do, I'll only use one layer pasta, other layers I'll use eggplant and zucchini! Tonight I prepared wheat noodles to go with the kids dinner and I found myself wanting a big 'ol bowl of pasta, the way my grandma used to make it :) So, I decided to add BROCCOLI!! I used less than 1/4 c cooked whole wheat noodles to my 1 cup cooked broccoli, added pepper to taste, a little Parmesan cheese and extra virgin olive oil! Tossed it up and it was SO good! It helped me balance the noodles, because like I said, if pasta is there...I'll eat it! And I'll not only eat it, I'll eat too much of it!!! Some people have other weaknesses and those are mine! Today's run went really well. It was before sunrise, so nice and breezy and I did my ol' three miles...

WILL I EVER FIND THE ENERGY/STRENGTH TO PUSH THROUGH THAT THREE MILE MARK??! Help??!!!! I was doing SO good there for a while, but this heat has really taken its toll and I feel like every ounce of energy is put into these short runs, I couldn't imagine pushing for 5 or 6? What's the secret?

Thank you SO much for all of your sweet comments in regards to my poor son and his burns. He seems to be doing great, every now and then he'll complain that they hurt :-( but for the most part, they are healing well. It was VERY scary for all of us and we're just glad that he is okay! We had such a great trip, aside from the accident! Jacob caught his first fish! He was SO proud. We played outside A LOT. We saw lots of alligators(I was a little scared!), and we let the boys get super filthy and have a great time exploring the outdoors...nothing better than that, right?!

a BAD scare

We took a little vacation before the summer comes to an end and THIS is how it started... my baby boy ended up in the ER after falling into the Old Smokey BBQ pit :-(. YES, it was so scary and luckily he suffered second degree burns on one hand and first degree on other. Face, ear and arm burns were only minor-thank goodness and they are already looking much better. It was definitely scary and I felt helpless because nothing Mommy could do, would make it better and that broke my heart.

As far as workouts, we just got back into town and will start back tomorrow. The eating on our trip wasn't awful but wasn't great either, so today we are back on track!! I guess I need to start my training plan for the January half marathon, because lately, little three mile runs are all that seem to happen :-( I'm in a running funk...

runnin' like a girl and sweatin' like a man!

I could browse their running shirts for HOURS. So cute and fun! I thought this "run like a girl" shirt was super cute, BUT laughed at myself because of the "try to keep up"...it's no surprise that I'm NOT a fast runner but I enjoy running...so I feel like I can do and say what I want when it comes to the shirts that I wear, right?! Ha!




I have been SO bad about blogging this past week...but that's only because we've been spending LOTS of time at the pool!





I managed to get some good workouts in this week. Lots of 30 Day Shred, 6 week 6 pack and some running! Felt good, but think I've hurt my back.





Pulled a muscle and thought it was feeling better, went for a three mile run yesterday and last night it was hurting SO bad again :( Hopefully it'll get better with a few days off??





In other news: I'm TIRED of sweatin' like a man! Seems like I can get dressed for the day or stay in my workout clothes...either way, I'm DRENCHED! I have friends that don't sweat AT ALL...I am not one of those blessed people! Unfortunately. So until we get some cooler temps, this is what the Move It Momma has been forced to look like-EVERY DAY!!! All I can say is Ewwwwww!

Crunchy Wrap with some help from my boys!

After a great run with my two boys, one in the stroller and this one on his bike,


we decided to make a crunchy wrap that was OH. SO. GOOD!!! Crunchy Wrap:
You'll Need:
Carb balance, whole wheat tortilla

3 slices Boar's Head, oven roasted turkey breast
1 slice turkey bacon-cooked in microwave until crispy!
1/2 avocado, sliced thin
lettuce-I used spring mix
1 tbs sunflower seeds
2 tbs flaxseed meal

Layer it on and wrap it up!

Oh my goodness, if you like crunchy you're gonna love this! For the boys, I left out the sunflower seeds, so a little less crunch for them but they REALLY enjoyed it!
I served with orange slices and low fat cottage cheese! The best part was having my boys help me in the kitchen...I set it out and they did the layering! I love my little helpers :)

Do you ever create something last minute and it turns out AWESOME? This was the perfect meal after a nice workout, outdoors in the heat! I think we all came inside and drank three glasses of water, EACH! It was much needed after lots of sweating! Ewww!

...and that's all it takes!

Don't know about you, but certain days of the week I TOTALLY LACK MOTIVATION to exercise! Yes, even the one that LOVES to exercise has days where I'm just not feeling it and lately, it's been often due to this heat and since I have no gym membership, no chance of a workout on a treadmill in the cool A/C!!
All it takes for me to find that motivation?
Listening to others talk about their workouts, watching a health-related show on tv, fellow health bloggers and their workout posts/tweets, or looking at pictures of myself in my not-so-fit days! Yesterday was one of those days, so I turn on the tv as I'm preparing dinner(I prepared dinner at noon yesterday) and BAM! it was Jillian Michaels talking about exercise and how it makes her feel! I probably watched her for 3 minutes before putting on my workout clothes and getting it done! Ha! I did a nice 3 mile run and then in honor of her pep talk, Jillian's 6 week 6 pack 2! It felt great!

We all have to find what works for us, individually. We all have different triggers and motivations that keep us active. If not, you must find that motivation in your life again. When you find it and acknowledge it, you will see a different side of yourself that you might have thought you lost. For me, when I'm having a stressful day...exercise is the ONLY cure! A long time ago, it was food. But that food left me feeling empty and guilty afterward. These days when I use exercise, I feel great and have a sense of accomplishment with each workout...big or small. I guess you can say it's like exchanging one thing for another. But using exercise instead of food, makes me feel satisfied and proud! A huge change from the "old me"!

a yummy recipe from my niece!

The other day, my niece's came over for the day to play! I was preparing lunch and the oldest looked at me and said, "Hmmm, got any peanut butter bowls?" I laughed, not sure what in the world she was talking about. What is that? She said, "you take a small bowl and put two spoons PB and drizzle some honey, mix it up and there's your peanut butter bowl!!!" My first thought: She's a genius...what a great, healthy snack for kids! And you know I'm all about finding fun and healthy snacks for my boys! So, we tried it and they LOVED it! She said I made it perfect and it's the yummiest snack in the world! Ha! I'm thinking dried fruit would be SO great in these??! Anyway, our house has a new favorite snack, thanks to her :)


Yesterday's Workout: I've been bad about not logging on dailymile...whoops! Yesterday was a great morning run. No breeze, but it was before the sun came up, so nice and cool! I was jamming on my ipod and totally in the zone(I sound so cheesy when I say that!!!), then I stopped the music and listened to NOTHING! Even cheesier, IT WAS AWESOME!!! It was like I was totally in tune with nature and the things around me. Barely any cars on the street, so very quiet. I could hear birds, waterfalls, My breath, my feet. I was completely focused and thought of nothing. It's sad when thinking of nothing is a beautiful thing, right? Anyway, it was a great 3 mile run followed by 6 week 6 pack 2! And I must be paying for it today because my hip is a little sore and achy :( Yea, so no workouts for me today. I'll take it easy and gear up for a great workout tomorrow!!!

Will I Tri? (updated)

**This kind is different.....10 minute swim in lap pool, 30 minutes on spinning bike, and 20 minute treadmill run! You are competing on distance covered in time allowed! Basically this takes away my fear of coming in last! Ha! You will be on a timer and you just push out as much as you can in that time frame! Make sense? What do ya think? source
Since I started my weight loss journey in 2001, I told myself I would accomplish something I had ALWAYS wanted to do but never thought possible in my previous lifestyle. It was like in that life-changing moment, I made a deal with myself to complete something that I NEVER thought I could do. Something that would push me to continue this healthy lifestyle for the rest of my life and hopefully motivate and impact others along the way, showing them that ANYTHING IS POSSIBLE!! It was actually two things.
1. I will be taking on in January...my first half marathon! WOOHOO!
1.The other, a triathlon!
I had looked into this indoor tri before but the dates never worked out. But there's a few dates in September that might work out and I'm thinking for $30, I figure what's to lose! BUT I have a few issues...no gym membership for swimming or treadmill :(
Would I survive this indoor tri on little or no training??! I don't want my fears holding me back and I'm thinking if I use this race as a starting off point, maybe a "real" tri is in my future?!

Today's Workout: nice, morning run with a cool breeze and sprinklers going like crazy! I'm not gonna lie, I ran through EVERY sprinkler I could find! Ha! My favorite running song right now is "This Boy's Fire"-Carlos Santana and Jennifer Lopez! An oldie, but goodie! It's the song I find on the playlist when I feel like I'm moving in slow motion and I need some motivation to kick myself back into gear! It works every time!

things I wanted to share

I always tell myself I'll share exciting discoveries with all of you and I tend to forget! Especially when it comes to healthy foods that are kid-friendly! I have tried some new products that have been awful, but I have also tried things that are totally delicious! Some of those yummy things I'd like to share with all of you, so here we go!!!

I found this healthy treat at Wal-Mart-of all places! These are SO good. I love a good high fiber tortilla or pita but these exceeded ALL of my expectations! I have used them at breakfast, lunch and dinner!! My kids tell me they want an "egg pocket"-which means these pitas wrapped around scrambled eggs! My kids LOVE them and my hubby does too! I have baked them in the oven until crispy to make healthy tostadas and much more!

and these are SUPER cool! I just discovered them last weekend at a birthday party! We all know of CapriSun's...full of sugar and a popular drink for kids! These come in those same famous pouches but instead of a sugary drink...WATER! Yep! Genius, right?! I have contacted the company to learn more and find out where we can find these brilliant H2O's and I'll let you all know! My son's both LOVED them and my oldest was calling them a "water, juice box"! Ha!

Yesterday's Workout: a great 4 mile DETOX run! Meaning, I had to sweat out all of the junk food that was consumed over the weekend! Yikes! I think we were successful, because we've really bounced back on track this week! I guess we all need weekends of splurging every now and then! I am dreading the start of half marathon training, I guess I'll try and stick to my shorter distances until the weather cools off a bit!


Healthy Tip: Beat the heat by heading outdoors after dinner! When the sun goes down a bit, take the family for a walk or bike ride! This way you are all being active together and you'll make sure and eat healthy knowing you'll have to go walk it off immediately after!
