Does this recipe look yummy, or what?! When I received this one, I knew I had to try it immediately and I'm sure happy that I did...SUPER YUMMY!!! Now it's your turn to give it a try...

Baked Salmon with Cucumber Dill Sauce

Ingredients
1 pound salmon, raw
2 1/2 tablespoons lemon juice
2 tablespoons water
1 cup nonfat sour cream
2 teaspoons dried dill or 2 tbsp fresh dill
1/2 cup diced cucumbers
1/4 cup minced green onion

Preparation:
1. Preheat oven to 350 degrees F.
2. Rinse salmon fillets under cold, running water and place them in a large baking pan.
3. Sprinkle the lemon juice and water over the salmon and place the pan in the center of the oven. Bake until done, or when the fish turns opaque and flakes easily with a fork, about 20 minutes.
4. Meanwhile, mix remaining ingredients for sauce in a small bowl.
5. Serve fish fillets hot with the sauce on the side.

Summer is nearly upon us and with it comes seafood season! But did you know that the type of fish you’re eating and how it’s cooked matters, and can even impact your risk of heart failure?

A new study published in the journal of the American Heart Association (see below) found that the risk of developing heart failure was lower for older women who frequently ate baked or broiled fish and higher for those who ate more fried fish. Additionally, dark fish like salmon were found to be healthier for the heart than tuna or white fish, such as sole.

Heart-healthy eating is important for everyone, but it’s especially important for the nearly 26 million people in the U.S. who have type 2 diabetes, and who are 2 to 4 times more likely to have heart disease and stroke than people without the disease.
